Mustard is so versatile and the star of the show in many recipes as it will transform the flavor in your favorite dish. I have always loved mustard since I was a child and this mustard sauce will not disappoint. If you love mustard, you are going to LOVE this sauce.
1/2 cup raw cashews
2 small Yukon gold potatoes, peeled & cubed (1 cup)
1/2 cup Dijon mustard
1 cup water
2 Tablespoon fresh lemon juice
1 Teaspoon ground turmeric
1/2 Teaspoon dried ground shallot
1-In a small saucepan, add the Yukon gold potatoes with enough water to cover and bring to a boil. Then lower heat until the potatoes are tender. Once done, drain and set aside.
2-Place all ingredients in a high speed blender and blend until smooth. Pour in a small bowl.
3-The sauce will thicken up a bit. If you want to use as a salad dressing, add a little more water until you achieve the consistency that you desire.
