DESCRIPTION:
Who doesn’t love a good wrap, and this Chickpea/Avocado wrap will not disappoint! It’s that good! It can be eaten on its own for a quick snack, meal or piled into a wrap. It’s gluten free, dairy free and oil free.
INGREDIENTS:
2-15oz. can salt-free Garbanzo beans, drained and rinsed
2 medium ripe avocados
2 Teaspoon pickled jalapeños
1 small red onion, finely chopped
1 pint cherry tomatoes, quartered
2 Teaspoon garlic powder
3-4 fresh limes, zest & juice
1/2 Teaspoon black pepper
3-4 medium carrots, grated
Handful of fresh cilantro, parsley or fresh dill, chopped
PREPARATION:
1-Place the Garbanzo beans in a food processor fitted with in “S” blade and pulse a few times until you break the beans down. Don’t over process.
2-Add the avocados and pulse a few times more.
3-Place the garbanzo beans and avocado in a large bowl, along with all the remaining ingredients except the lime juice and cilantro.
4-Toss everything together, add the lime juice, mix, taste and adjust seasonings.
5-Add cilantro and mix until well combined. Enjoy
