Traditionally, Avocado Toast is a quick and easy meal anytime of the day, but now instead of making it with bread, I’m going to show you how to make it with sweet potatoes. It’s my favorite way to eat it and once you try it, it will become your favorite as well. These are super easy to make and there’s really no recipe but I’m going to give you some tips on how to make them. Sweet potatoes are versatile, delicious and packed with health benefits.
5-6 roasted sweet potatoes, cooled in the refrigerator overnight
1-15 oz. can salt free cannellini beans, rinsed & drained
1 batch of my It’s Guacamole recipe
2-3 Persian cucumbers, thinly sliced
1/2 cup cherry tomatoes, sliced in half
Your favorite Balsamic vinegar
Fresh basil, thinly sliced
1-Slice cooked sweet potatoes lengthwise into 1/4-inch thick slices.
2-Place the sweet potato slices in your air fryer, set at 400 degrees for about 22-25 minutes.
3-In the meantime, prepare your guacamole. My original recipe calls for 3 avocados, instead I replaced one of the avocados with a can of cannellini beans. It’s a great way to cut down on the fat.
4-Once your sweet potatoes are ready and have cooled for a few minutes, top with guacamole, cucumber slice, then add sliced cherry tomatoes, and fresh basil. Now drizzle with your favorite balsamic vinegar and enjoy.
5-Another way of making these is just add guacamole on the sweet potatoes and add Pico de Gallo. The possibilities are endless, enjoy.
