Chocolate Mint Bliss Balls

DESCRIPTION:

Chocolate and Mint are one of my favorite combinations, but if you’re not a fan of mint, you can simply leave it out of the recipe. These homemade, delicious treats are so easy to make and perfect for any occasion. They are made with Whole Foods Ingredients, and it uses whole dates for the sweetener. I predict you’ll be making it all the time.

INGREDIENTS:

15 medjool dates, chopped
2 Tablespoon almond butter, or any nut butter of your choice
4 Tablespoon raw cacao powder
1/4 Teaspoon peppermint extract
1 Cup raw almonds, chopped
1/2 Cup raw hazelnuts, chopped
1/2 Cup unsweetened shredded coconut
2 Tablespoon almond milk

PREPARATION:

1-In a food processor fitted with a “S” blade, add the almonds and hazelnut, and grind to a powder. Do not over process.
2-To the blender, add all the remaining ingredients, and blend until well combined. Process until it starts to form a ball in the processor. You want doughy consistency that will allow you to form a ball.
3- Using a 1” melon scooper, start to make 1” balls. Repeat until you have used all the mixture.
4-Put the bliss balls in the refrigerator or freezer to chill for at least an hour. Place the bliss balls in a sealable bag or container until ready to eat. They defrost quickly.

CHEF’S NOTES:

If the dates you are using are too dry, make sure to soak them for at least 15 minutes, but do not use the water.
