For my mom’s birthday, I wanted to make her something very special and tasty. So I came up with a healthy Mousse De Chocolate. It’s rich, creamy and uses healthy ingredients. It’s dairy free, nut free, fruit sweetened and it’s fast and easy to prepare. It’s the perfect dessert for any special occasion or holiday season. I hope you enjoy it as much as we do.
1-15oz can salt free Cannellini beans, rinsed & drained
2 large Haas Avocados OR 2-3 small to medium avocados
4 Tablespoons Cacao powder
1/2 Teaspoon vanilla powder
1/4-1/2 cup almond milk
1 cup frozen cherries, thawed and chopped
1/4-1/2 cup dairy free dark chocolate chips
8-10 medjool dates, soaked in 1/2 cup of water, for at least 30 minutes
1-In a food processor fitted with a “S” blade, add beans, avocados, cacao powder, vanilla powder , cherries, dates and date water. Start with 1/2 cup of almond milk. Process, stopping half way to check and scrape down the sides. At this point add another 1/2 cup of almond milk and blend. Check the mousse, it should have a smooth consistency. Typically I use about a cup. At this point, add some chocolate chips and pulse the batter.
2-Pour the mixture in a beautiful glass, top with fresh pomegranates, or other berries of your choice, add a few chocolate chips on top and put in refrigerator.
3-Keep in refrigerator for a few hours before serving. Enjoy.
