DESCRIPTION:

As a child, I really enjoyed making cookies during the holidays. These Oatmeal Christmas Cookies incorporate fresh cranberries which are perfect for the holidays. They are soft, chewy and have a fresh scent of orange, pumpkin, pumpkin spice, cinnamon and chocolate, the perfect combination. I hope you enjoy them as much as we do.

INGREDIENTS:

1 cup gluten free rolled oats, ground into flour
2 cups gluten free rolled oats
1 cup fresh cranberries
1 small orange, zest & juice
1 can pure pumpkin purée
1 small ripe banana
1/4 Teaspoon vanilla powder
1 Teaspoon pumpkin spice or more to taste
1/2 cup dairy free dark chocolate chips
1/2 cup unsweetened apple sauce
1/2 Teaspoon cinnamon

PREPARATION:

1-Pre heat the oven at 350 degrees
2-In a large bowl, combine rolled oats, oat flour, cinnamon, vanilla powder, and pumpkin spice. Mix well.
3-In a food processor, fitted with a “S” blade, add pumpkin, apple sauce, banana and orange zest & juice. Process until smooth. Now add the fresh cranberries, and pulse. You want to be able to see chunks of cranberries, you don’t want it smooth.
4-Now add the wet ingredients to the dry ingredients. Add your chocolate chips and mix well.
5-Using your 1.5” scooper, scoop out the mixture and with your hand form a cookie and place on parchment paper.
6-Bake in the oven for 25-28 minutes, enjoy!

    1. There’s a chocolate company by name of Santa Barbara Chocolate Company. They have 100% pure unsweetened chocolate. But it can be bitter if you are not used to it. If that’s too strong there’s plenty of vegan dark chocolate out there.

    2. I typically use 100% unsweetened dark chocolate, it’s by the Santa Barbara Chocolate Company. But it also depends on my guests as some cannot handle the 100% unsweetened dark chocolate. It’s definitely always dairy free.
