DESCRIPTION:
These Chocolate Cherry Pumpkin Cookies are a delicious treat during the holidays. They’re soft and chewy, with just the right amount of sweetness. And if you love pumpkin’s then you’re going to love these.
INGREDIENTS:
1 cup oat flour
2 1/2 cups rolled oats
1/2 Tsp cinnamon
1 cup pure pumpkin purée
1 small ripe banana
1/2 Tsp vanilla powder
1/2 cup dried cherries, (oil free) chopped
1 Tsp pumpkin spice, or more to taste
1/2 cup dairy free chocolate chips, or more to taste
1/2 cup unsweetened apple sauce
PREPARATION:
1-Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
2-Combine all dry ingredients in a large bowl
3-Add to a food processor fitted with a “S” blade, pumpkin puree, banana and apple sauce, and process until smooth and creamy. Now add this to the dry mixture until well combined.
4-Add in the chocolate chips and dried cherries
5-Mix well until everything is well incorporated
6-Drop spoonfuls onto a cookie sheet and bake for 20-22 minutes
7-Once they’re done, take them out of the oven and let cool for 5 minutes, then transfer onto a cooling rack.

Do you have to use a food processor or will a high powered blender work for this recipe?
I’ve never tried it in a high speed blender, but I don’t see a reason why it wouldn’t
