DESCRIPTION:
These vegan Chocolate Chip Pumpkin Oat Muffins are a perfect blend of health and happiness for your taste buds. We are using wholesome ingredients with the rich warm flavors of pumpkin, aromatic spices and chocolate.
INGREDIENTS:
2 cups of gluten free rolled oat flour
4 teaspoons pumpkin spice
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon vanilla powder
1-15oz. can pure pumpkin
1/2 cup unsweetened apple sauce
2 teaspoon date syrup
1/3 cup non-dairy plant milk
1 teaspoon apple cider vinegar
1/2 cup raw pumpkin seeds, chopped (optional)
1/2 cup raw pecans, chopped (optional)
1/2 cup dairy free chocolate chips or golden raisins
PREPARATION:
1-Preheat oven at 350 degrees F.
2-Place all the dry ingredients in a bowl and mix till everything is well incorporated.
3-In a separate bowl, add all the wet ingredients and mix.
4. Pour the wet ingredients into the dry ingredients and stir together. Do not over mix, just stir until everything is incorporated into the batter. Gently fold in the the chocolate chips or raisins.
5-Divide the muffin batter evenly among the muffin cups, filling each about 3/4 cup full. Top the muffins with some chopped pecans and pumpkin seeds. Gently push them down.
6-Bake in the oven for 28-30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
7-Allow the muffins to cool in the muffin pan for 5-10 minutes then transfer them to a wire rack to cool completely.
