Packed with wholesome ingredients and the warm flavors of pumpkin pie, these treats are not only a delight for your taste buds but also easy to make and it’s completely raw with no baking involved.
2 cups gluten free rolled oats
10-12 large medjool dates, soft pits removed
1 cup raw pecans
1/2 cup pure pumpkin purée
2 teaspoon pumpkin pie spice
1/2 teaspoon pure vanilla powder
2 tablespoons hemp seeds
2 tablespoons ground golden flax seeds
1/3 cup non-dairy chocolate chips (optional)
1 cup unsweetened shredded coconuts, for coating
1-Place everything in a food processor fitted with an “S” blade until it starts to form a ball.
2-Using a 1” melon or ice cream scooper, scoop out the mixture and use your hands to create a bite sized ball.
3-Place the shredded coconut into a small bowl, and roll the balls until fully coated.
4-Store in a air tight container and place in the freezer for up to two months.
