Apples & Cranberry Cobbler

DESCRIPTION:

Nothing says fall like the aroma of fresh apples & cranberries wafting through your kitchen.  This dessert is incredibly tasty, super healthy, making it the perfect guilt free indulgence for the season.

INGREDIENTS:

FILLING:
4 apples, Granny Smith/honey crisp (or your favorite), cut into chunks
2 teaspoon apple pie spice
1 cup unsweetened apple sauce
1 teaspoon ground ginger
1/2 teaspoon vanilla powder
2 cups fresh cranberries, if using frozen let it thaw

CRUMBLE TOPPING:
2 cups gluten free oats
2 medium ripe bananas
1 teaspoon apple pie spice
1/2 teaspoon vanilla powder
2 teaspoon date syrup
1/4-1/2 cup chopped pecans, optional

PREPARATION:

1-Preheat oven to 350 degrees F.
2-Place all the filling ingredients in a bowl and stir until the apples and cranberries are well coated.
3-Pour into a 9”x9” baking dish.
4-In a medium bowl, mash the bananas.  To that mixture add the rolled oats, spices, pecans and mix until well combined.  To this mixture add 2 teaspoon date syrup and mix until you get crumble mixture.
5-Using your hands, sprinkle the crumble topping over the apples and cranberries,
6-Bake in the oven, uncovered for 40-45 minutes,
7-Top with banana nice cream, enjoy.
