DESCRIPTION:

Indulge in guilt-free goodness, Sweet Potato Chocolate Mousse Baked Oat Cups. The oat cups are filled with velvety chocolate mousse and topped with fresh raspberries adds a luxurious touch to these oat cups, making them perfect for both cozy nights in and impressive gatherings.

INGREDIENTS:

Base Oat Cups Ingredients:
3 cups gluten free rolled oats
1/2 Teaspoon vanilla powder
1/2 Teaspoon ground cinnamon
1 1/3 cup mashed banana
2 cups sweet potato chocolate mousse

PREPARATION:

1-Preheat the oven to 350 degrees F.
2-In a medium bowl, mix all ingredients except the chocolate mousse. Stir the oats until well combined.
3-Using 2oz. melon scooper take one scoop and put in a silicone muffin pan. You should have enough for twelve oat cups. Using your hand or the back of a large spoon, press the top of the oats till you have a flat surface.
4-Gently using the bottom of a spice jar, gently press down in the middle until you have created a deep cavity in the center and the sides. Please watch the video for the exact instructions.
5-Bake in the oven for 18 minutes. Once out of the oven, please let the oat cups to completely cool on a wire rack.
6-Once it has completely cooled, take them out of the tray and fill them with the sweet potato chocolate mousse. Top with fresh raspberries. You can also fill them with fresh yogurt and top with fresh berries.
