This watermelon Quinoa salad is a true symphony of colors and taste. It’s loaded with rich quinoa, juicy chunks of fresh watermelon, and a vibrant assortment of fresh vegetables, this salad is a celebration of wholesome ingredients and bursting with flavors.
2-3 cups cooked quinoa
1 cup English cucumber, cubed
1 cup corn kernels
1 small red onion, thinly sliced
4 cups fresh watermelon, cut into bite sized cubes
1/2 cup fresh mint or fresh basil
1/4 cup balsamic reduction glaze
Zest & juice of 2 fresh limes, or more to taste
Black pepper to taste
1/4 cup raw sunflower seeds, optional
1-Cook quinoa according to the package instructions.
2-Allow the quinoa to cool completely while preparing the other ingredients.
3-Place all remaining ingredients, except for the mint and sunflower seeds in a large bowl.
4-Toss together gently.
5-Store covered in the refrigerator until ready to serve.
6-Garnish with sunflower seeds and mint right before serving and drizzle with more balsamic glaze.
7-This salad will keep for 4-5 days.
