DESCRIPTION:

Looking for an easy vegetable side dish? Well look no more as there’s nothing more delicious than Delicata Squash. It has a wonderful flavor, slightly sweet and perfect for fall. If you have not tried them, you definitely must give them a try. Delicata Squash is a fall squash and the season is short. It’s not quite as starchy as the standard squashes like butternut and acorn squash, but I promise, you Will absolutely love them. And the best part, they are so easy to make.

INGREDIENTS:

4 Whole Delicata Squash
Optional, add herbs & spices

PREPARATION:

1-Preheat oven to 425 degrees
2-Wash the squash, and place them one at a time in the microwave for 3 minutes to soften them to cut them in half.
3-Using a sharp serrated knife, slice the ends of the squash. Then slice the squash in half. Using a spoon, scoop out the seeds and strings. At this point, you may want to add some spices.
4-Line a cookie sheet with parchment paper, then place the squash flesh side down.
5-Bake in the oven for about 40 minutes until the squash is tender and caramelized. Then go ahead and flip the squash and bake for extra 10-15 minutes.
6-Remove from the oven, serve and enjoy.

  1. Delicious! I love this recipe, and have made it several times. It is in my favorites! I eat it alone, or top it with vegan cheese sauce, yum!
