DESCRIPTION:
This “Un-Fried” Pineapple Rice is definitely a crowd pleaser and one of my favorite meals. It’s super easy, vegan, gluten free and of course its oil free.
INGREDIENTS:
4 Cups cooked brown rice
1 Cup diced carrots
1 Medium onion, chopped
1 Cup frozen peas, thawed
1 Cup red bell peppers, diced
2 Cup fresh pineapple, diced
2 Tablespoon fresh ginger, minced
1/2 Cup raw cashews, optional
5 garlic cloves
Chopped green onions, chopped for garnish
1-2 Tablespoons Shichimi Togarashi spice, from savory spice OR 1/2 teaspoon red pepper flakes
2-3 Tablespoons sweet chili sauce, from the Date Lady
PREPARATION:
1-Water sauté carrots, bell peppers, peas and onions, until the vegetables have
softened. About 7-8 minutes (Add a little water if needed)
2-Next add garlic and fresh ginger and mix until well combined.
3-Next add the cooked brown rice, pineapple, cashews, Schichimi Tgarashi spice and the sweet chili sauce. Mix well
4-Top with chopped green onions

Hi Shayda, just got your website from Pam on ultimate reboot. Is the date lady sauce made of dates? Don’t want extra sweetner, is there an alternative? Just chili powder or something better to use?

Yes, the sauce from the Date Lady is only made from whole dates. That’s why I like it there’s no other sweetener added. Plus I only use it once in awhile and very little of it. You can certainly leave it out. And just use the teriyaki balsamic. I hope this helps.
