DESCRIPTION:
Today on healthy cooking with Shayda I made a delicious side dish that goes well with almost anything. It is served as a side dish for many stews, and rice dishes. But it also makes a wonderful appetizer or a light snack. It is a perfect summer dish that takes only a few minutes to make. Please check out the video on my YouTube channel.
INGREDIENTS:
4 cups or 32 ounce container of plain, unsweetened non-dairy yogurt
3 english cucumbers, or 8 persian cucumbers, cubed
1 shallot finely, chopped
3-4 tablespoon dried mint or more to taste
1 teaspoon dried oregano
Black pepper to taste
Chopped walnuts, optional
PREPARATION:
Put everything in a medium bowl, and stir together. Refrigerate for at least 1 hour for all the flavors to blend together. Enjoy!
