DESCRIPTION:
I’m a salsa fanatic and when I saw that I had fresh peaches and mangoes, well I just had to make salsa. It’s fast, easy, healthy, spicy, fruity and absolutely delicious. And it tastes great on just about everything. I hope you will give it a try. If you don’t like it spicy, feel free to leave it out.
INGREDIENTS:
1 Large red bell pepper, cubed
2 Large firm peaches, cubed
1 mango, cubed
1/2 cup red onion, chopped
1 Avocado, chopped (optional)
1/4 teaspoon dried jalapeño pepper
1 teaspoon lemon pepper
3-4 Tablespoons lime juice & zest
1/4-1/2 cup packed cilantro, chopped
PREPARATION:
1-Add all the ingredients to a large bowl, and mix gently.
2-Taste and adjust seasonings.
3-Refrigerate for at least one hour before serving. Enjoy!

What can I substitute for the 1 large red bell pepper.
I cannot eat bell peppers – always get sick.
Well, you can leave it out, or you could replace it with chopped Roma tomatoes. Make sure the tomatoes are firm.
