DESCRIPTION:
These black bean quinoa tacos are hearty and filling and they are jam packed with healthy ingredients. This is one of my favorite recipes, that even your meat eaters are going to love. One of my favorite things about these tacos is that they’re made entirely with staple pantry ingredients and your favorite taco seasoning.
INGREDIENTS:
2-15oz. can salt black beans, rinsed & drained
3 cups cooked quinoa
1 1/2 cups roasted corn
1 red bell pepper, chopped
5-6 cloves of garlic, minced
1 Teaspoon jalapeño powder
1 small red onion, finely chopped
2 limes, juiced
1/2 cup water
2 Tablespoons salt free taco seasoning
Black pepper to taste
SERVE WITH:
Corn tortillas
Chopped lettuce
Diced avocados
Cilantro
Pickled jalapeño
Cilantro Lime Sauce
Diced tomatoes
PREPARATION:
1-In a large non-stick pan, over medium high heat, dry sauté the onions until caramelized. Halfway through, add the bell peppers. Add a little water as needed.
2-Next add the chopped garlic and sauté 1 minute longer.
3-To this mixture add corn, black beans, quinoa and toss gently.
4-Next add 1/2 cup water and mix everything.
5-Next stir in jalapeño pepper, taco seasoning and black pepper.
6-At the very end, stir in the lime juice

where can I find no salt taco seasonings?
The salt free taco seasoning is by Frontier. You can find them online or I know some grocery stores, like whole foods carries that brand.
