These Spooktacular Halloween Monster Vegan Cookies are not only delicious but healthy as well!  They are so silly and cute, you can’t help but smile when you eat them!  They are made with wholesome ingredients, gluten free, fruit sweetened.  No food coloring was used as I made my own coloring from using carrots and saffron.  Should you want to leave that out you certainly can.

1 (15oz.) can salt-free chickpeas, rinsed and drained
3 medium ripe bananas
1/2 cup raw almond butter
4 Tablespoons pure unsweetened apple sauce
1/2 Teaspoon vanilla powder
1 Teaspoon baking soda
2 Teaspoon Pumpkin Spice
3 cups gluten free rolled oats
1/2 cup golden raisins
1 Teaspoon cardamom
4-5 Tablespoons of food coloring
Candy Eyes for Decoration ONLY

Food Coloring:
Juice 4 medium to large carrots.  Add the carrot juice to a small saucepan with 1 Teaspoon of ground saffron, and 1/2 cup of water.  Simmer for 5 minutes, and make sure to keep mixing.  Strain and store in a small container in the refrigerator. 

1-Pre-heat the oven at 350 degrees F.
2-Make the food coloring and set aside.
3-Add everything to the food processor fitted with an “S” blade, except 1 cup of oats, raisins.  Give it a quick spin, maybe 10-15 seconds.
4-Add your food coloring and mix until the coloring is well combined.
5-Add everything to a large bowl.
6-To this mixture, add 1 cup of gluten free rolled oats and the raisins.  Mix well.
7-Line a baking sheet with parchment paper or silpat. Using a 1 1/2” ice cream scooper, scoop the cookie mixture onto a baking sheet and then use your damp hands (The batter will be sticky) to gently press and shape them into round cookies.
8-Bake in the oven for 25-28 minutes.
9-At this point if you want to use candy eyes, you will want to immediately press the eyes into your cookies while they are still warm and let them cool.  I use the eyes for decoration purposes ONLY!!
