DESCRIPTION:

This super easy, fire roasted salsa is a quick and easy alternative to store bought salsa. You probably already have all the ingredients in your pantry. This is how this salsa came together. You can make it as spicy or mild as you like by adjusting the amount of the dried jalapeño pepper. It’s loaded with flavor and it’s perfect with chips, tacos, burritos and nachos. I hope you will enjoy it as much as I do.

INGREDIENTS:

2-14.5oz can fire roasted diced tomatoes, salt free
4 cloves of garlic, minced
1 bunch cilantro, chopped
1 cup red onion, chopped
1 teaspoon dried jalapeño pepper, or fresh jalapeño (chopped)
1 teaspoon cumin powder
1/2 teaspoon chipotle powder
1/4 teaspoon black pepper
1-2 fresh limes, zest & juice

PREPARATION:

1-Put everything in the food processor and pulse until you get the consistency and texture you like.
2-Taste and adjust seasonings .

CHEF’S NOTE:

1-In your food processor, fitted with a “S” blade, add the two cans of the fire roasted tomatoes. Next add, the minced garlic, chopped onion, jalapeño pepper, cumin powder, chipotle powder, fresh ground pepper, the lime (zest & juice) and cilantro. Mix well with a spoon.
2-Start pulsing everything in the food processor. I prefer this salsa to be chunky and not to watery.
3-Put the salsa in the refrigerator and let it rest for an hour.

  1. Do you drain the tomatoes first? Instructions seem to be for guacamole….but anxious to try this as we love fire roasted salsa and cannot find a salt free one in stores.
