DESCRIPTION:
This salad is named for the city in southwestern Iran, is found on practically every Iranian table at almost every meal. It is a simple and bright dish, that consist of Persian cucumbers, tomatoes, onions and herbs and a citrusy dressing.
INGREDIENTS:
6 Persian cucumbers or 1 English cucumber, unpeeled
6 Firm Roma tomatoes
1 small red onion, chopped
2-3 Tablespoon EACH of chopped fresh parsley, dill, cilantro and mint
2 limes, zest & juice
1/4-1/2 teaspoon dried jalapeño pepper
PREPARATION:
1-Dice the cucumbers, tomatoes and red onion into uniform cubes. Put in a bowl.
2-Chop all the herbs and add to the bowl.
3-Add the jalapeño pepper, lime juice and zest.
4-Gently mix everything together and enjoy.
