Summer “Beet It” salad

DESCRIPTION:

I absolutely love raw beets, as it has an earthy flavor and they are less sweet. It’s so yummy and extremely nutritious. Here I’ve combined raw red beets and golden beets that have been spiralized, along with other vegetables. It’s a gorgeous, bright, and incredibly delicious and easy to make, bursting with flavor. It will even have non-beet lovers asking for more. This salad is better if you let it sit in the refrigerator for a few hours for the salad to marinade.

INGREDIENTS:

1 cup shredded raw green cabbage
1 cup shredded raw purple cabbage
1 raw zucchini, shredded
1 raw yellow squash, shredded
1 raw green apple, shredded*
2 raw carrot, spiralized
1 raw golden beet, spiralized
1 raw red beet, spiralized
1 small red onion chopped or sliced
White balsamic vinegar to taste
Apple Cider vinegar to taste
1/2 Lemon Juice
Seasoning of you choice (I used Bohemian Spice from Savory Spice) or you can use Herbs de Provence

PREPARATION:

1-In a large bowl, add all the shredded cabbage, spiralized beets, carrots, and all the remaining ingredients.
2-Add your seasoning, balsamic vinegar, apple cider vinegar and lemon juice. Toss everything together, and let the salad sit in the refrigerator for a few hours.

You can drizzle the shredded apple with lemon to prevent it from turning brown.

    Shayda you are an inspiration to me in your accomplishment and recipes. Thank you very much. After a 20+ lb. Weight loss following Chef CJ I am a little worried about slowing down the process. Any advice is welcome.

    1. My biggest advice would be for you to eat as simple as possible and eat more vegetables. Always start your meals eating a salad and/or steamed veggies. Hope this helps ❤️
