DESCRIPTION:
These gingerbread bliss balls are perfect for the holiday season or honestly anytime you are craving something sweet. Packed with wholesome ingredients, these delicious bliss balls are gluten free, no bake, and are super quick and easy to make. They have an amazing gingerbread flavor.
INGREDIENTS:
1 cup raw pecans
2 cups gluten-free rolled oats
2 Tablespoons ground flax seeds
1/2 Teaspoon ground cinnamon
1 Tablespoon orange juice
12-14 soft medjool dates
2 Tablespoons hemp seeds
2 Tablespoons raw cacao powder
2 Teaspoons gingerbread spice or more to taste
1/4 Teaspoon vanilla powder
1 cup unsweetened shredded coconut, for coating the balls
PREPARATION:
1-Place everything in a food processor fitted with a “S” blade and process until it starts to form a ball. Stop halfway through to scrape down the the sides. You may need to add more dates, add one at a time until a ball starts to form.
2-Using a 1” melon or ice cream scooper, scoop out the mixture and use your hands to create a bite sized balls.
3-Place the unsweetened shredded coconut into a small bowl and roll one ball at a time until fully coated.
4-Store in an airtight container and place in the freezer for up two months.
