DESCRIPTION:
This delicious granola is made with fresh cranberries, ripe bananas, oranges, cinnamon and an array of seeds. It’s the perfect balance of flavors and textures without the need for added oils or sugars.
INGREDIENTS:
10 ripe bananas, large to medium in size
6 cup’s gluten free rolled oats
3 large oranges, zest and juice
1 Teaspoon ground cinnamon
1 Teaspoon vanilla powder
2 cups fresh cranberries, (defrosted if using frozen), sliced in half
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1 cup sun dried golden raisins
PREPARATION:
1-In large bowl, mash all the bananas so that there’s no lump.
2-Using a zestor, zest all the oranges and add to the banana mixture and mix well.
3-To this mixture add juice of all the oranges, mix well.
4-Add cinnamon and vanilla powder, mix well.
5-Add the cranberries, raisins, pumpkin and sunflower seeds and mix until well incorporated.
6-To this mixture add the rolled oats. Using your hand or a large spoon mix everything until the granola mixture is well combined.
7-Using your hands, drop small clusters of the granola mixture onto the reflex on a dehydrator tray and dehydrate at 145 degrees for about 12 hours. After 12 hours flip the granola so that the mixture is now on the mesh tray. Make sure to break up the granola into bite size pieces, and dehydrate for another 12 hours.
8-Store in an airtight container or freezer bag bag to preserve freshness. Enjoy
