INGREDIENTS:
1 medium red onion, sliced
2 cups of mushrooms, sliced
1 small zucchini, sliced
1 small yellow squash, sliced
1 cup broccoli florets
1 cup cauliflower florets
1 cup red cabbage, sliced
1 Cup Carrots, sliced
6 garlic cloves, minced
1 small grated ginger (or more to taste)
1 TBSP Cumin (or more to taste)
1 1/2 TBSP Curry Powder (or more to taste)
Pinch of Cayenne pepper (or more to taste)
4 cups cooked quinoa
PREPARATION:
1-In a large pan saute all veggies at the same time.
2-Once the veggies have started to cook down, add fresh ginger and garlic.
3-After a minute or two add your cayenne pepper, curry powder and cumin. Mix well.
4-Once all veggies have cooked to the tenderness you like, toss in your quinoa, mix really well and cook for about 1-2 minutes longer. Serve and Enjoy!
