INGREDIENTS:
2 cups chopped Romaine lettuce
1 1/2 cups cooked oat groats
1-14.5 ounce can black eye pea, rinsed & drained
1/2 cup chopped tomatoes, or more
Chopped cilantro to taste
Balsamic vinegar to taste
PREPARATION:
1-Chop the Romaine lettuce and put in a bowl.
2-Place the cooked oat groat on top of Romaine lettuce.
3-Rinse and drain the black eye pea and put on top of the oat groat.
4-Place chopped tomatoes on top, and sprinkle some chopped cilantro to taste.
5-Balsamic vinegar to taste.
