INGREDIENTS:
2 raw zucchini’s, spiralized
1 raw yellow squash, spiralized
3 garlic cloves, minced
1 med white onion, chopped
2 raw carrots, julienned
1-10oz bag sliced mushrooms
1-10oz bag chopped broccoli
1-3oz bag oil free sun dried tomatoes
2 Tbsp fresh basil, chopped
1-14.5oz can salt free black beans, rinsed & drained
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
PREPARATION:
1-Spiralize the zucchini and squash and set aside.
2-Julienne the carrots, mince the garlic, chop the onions, rinse the black beans and chop the bell peppers and set aside.
3-In a 15” frying pan, over medium heat, start to dry sauté your onion, adding water a little at a time as needed, until the onion has caramelized.
4-Then add to the onion, carrots, bell peppers, broccoli, mushrooms, sun dried tomatoes and garlic, until vegetables are aldente.
5-Add the black beans, mix and cook for anther minute or two.
6-Add the spiralized zucchini and squash, and mix with everything until the noodles are slightly cooked. Add the juice of one lime and your favorite oil free and salt free hot sauce. Or you can also add a flavored vinegar.

Shayda, is this what you made on zoom with Chef AJ that is also in her book with the bikini name? I don’t see a can of tomatoes on this ingredient list but you added one on the zoom. Can’t wait to try some of your recipes!

Hi Lisa, yes sometimes I do add a can of tomatoes and sometimes I don’t. So both ways are absolutely delicious. I hope you enjoy it
