DESCRIPTION:
Making egg whites couldn’t be easier to make, using just two ingredients. The liquid from your can of chickpea and vinegar. And don’t worry, your egg whites will not taste like beans.
INGREDIENTS:
1-15oz. can chickpea, reserve the liquid
1/2 teaspoon vinegar, either white or apple cider
PREPARATION:
1-Drain the chickpea liquid, aquafaba, into a mixing bowl.
2-Add 1/2 teaspoon of apple cider vinegar to the aquafaba.
3-Using a hand held mixer, begin mixing the liquid on low speed. It will start to foam and thicken, just be patient.
4-After 6-7 minutes, turn the mixer up to medium speed. It will continue to thicken the longer you mix it.
5-After 10 minutes, turn the mixer up to high speed and continue mixing until you reach the stiff peaks. This could take an extra 10 minutes.
6-Now use the whipped aquafaba in place of whipped egg whites in your recipe. This usually means folding it into your batter.
