The Best Chickpea Quinoa Burger

INGREDIENTS:

1 cup uncooked quinoa
1 -14.5 ounce salt free garbanzo beans, drained and rinsed
1 medium onion, chopped
1/2 cup fresh cilantro, chopped
2 tsp cumin
2 tsp smoked paprika
2 tsp garlic/onion powder
1 tsp dried jalapeno pepper or more to taste
1 large Yukon gold potato, steamed

PREPARATION:

1-Cook the quinoa using your preferred cooking method and place in a bowl and set aside.
2-Steam your potato and set aside.
3-Once the quinoa and potato have cooled add to a large bowl. Add everything to the bowl, and mix well.
4-Once everything is mixed well, add everything to a food processor fitted with a “S” blade.
5-Blend until everything is mixed well and starts to form into a dough.
6-Do not over mix, you don’t want it to be a paste.
7-Take the mixture out of the food processor and add it to the bowl.
8-Let the mixture sit in refrigerator overnight
9-Form the mixture into patties
10-Bake at 400 degrees for 30 minutes on each side.
