Corn salad is one of our favorite side dishes during the summer. But, because the there’s frozen corn, this delicious salad can be eaten year round, which makes me happy!! This salad is easy to make, and tastes incredibly fresh without a lot of ingredients, or fuss and it’s brimming with nutritious goodness. You’ll love the satisfying blend of textures and the overload of freshness.
2-16 ounce bag of frozen Roasted Corn, defrosted or 4 cups fresh corn, shucked
2 Red Bell peppers, cubed
1 large avocado, diced
1 medium red onion, diced finely
1/4 cup diced pickled Jalapeño peppers or more to taste (no juice)
1 small bunch fresh cilantro, chopped
1/4-1/2 cup fresh lime juice & zest
1 Teaspoon granulated garlic
1 Teaspoon cumin or more to taste
4-5 Tablespoons of Sweet Chili Sauce (From the Date Lady) or more to taste
1-Put the defrosted corn, red bell peppers, red onion, avocados and pickled jalapeños in a large bowl.
2-Add garlic, cumin, cilantro, lime juice and zest and toss gently. (Make sure the avocados get the lime juice so that they don’t turn black.)
3-Add the Sweet Chili Sauce right before you’re ready to serve.
