INGREDIENTS:
2 large zucchini, spiralized
1 large yellow squash, spiralized
2 large carrots, spiralized
2 cups shredded purple cabbage, chopped
PREPARATION:
1-Wash all the vegetables
2-Spiralize the zucchini, yellow squash, carrots, and chop the purple cabbage.
3-Toss everything in a bowl.
SPICY MANGO DRESSING
3 large ripe red mangos, chopped
1/2 cup cilantro, chopped
1/2 small avocado
1 small shallot
1/4 tsp jalapeño pepper
1/2 tsp citrus pepper
2 fresh limes, juice & zest
PREPARATION:
1-Put everything in a high speed blender, except for the cilantro, and blend. (If your mango is not juicy enough, add a few more mango and one more lime). You want really ripe mangos.
2-Add the chopped cilantro to the blender, and blend briefly. Do not over blend. You want to see specs of the chopped cilantro.
