This vegan chopped salad is filled with a colorful mix of crunchy vegetables, hearty chickpeas and butternut squash for a tasty salad that can be served as a side dish or a main dish. It pairs really well with quick & easy Dijon dressing.
INGREDIENTS:
4 Romain lettuce, chopped
1 1/2 cups cooked quinoa
1 small avocado, cubed
1-15oz. can salt free Garbanzo beans
1/2 cup oil free currants
1 raw red bell pepper, cubed
1 1/2 cups cooked butternut squash, cubed
1/2 cups raw pepitas, pumpkin seeds (optional)
PREPARATION:
Place everything in a large bowl and toss with quick & easy Dijon dressing or your favorite salad dressing.
