Lately I’ve been obsessed with eating oat groats as they have a nutty flavor and a rice like consistency. I enjoy making a savory breakfast with vegetables that I have on hand. I throw everything together in my Pampered Chef Micro Cooker, for a quick and easy breakfast. Feel free to experiment with different vegetables.
1 1/2 cup cooked oat groats
1/4 cup rainbow carrots, sliced
1/4 cup zucchini, chopped
1/4 cup yellow squash, chopped
1/2 cup Roma tomatoes, chopped
Balsamic vinegar (optional)
1-Prepare your vegetables and place them in your micro cooker or in a safe microwave bowl.
2-Add the cooked oats, mix and microwave them for 5 minutes. Remove and mix. At this point if you like you can drizzle some balsamic vinegar.
