DESCRIPTION:
These Lemon Drop Balls are incredibly addicting! They are that good, especially if you love lemons. Made with wholesome ingredients, they are gluten free, dairy free, vegan and easy to make. Thanks to the natural sweetness of the dates, they have the right amount of citrus kick without feeling like you just bit into fresh lemons. I hope you enjoy them as we do.
INGREDIENTS:
1 1/2 cups raw cashews
1/2 cup blanched almonds
1/2 cup unsweetened shredded coconuts
15 medjool dates, soft and chopped
The zest of 2 fresh lemons
1/2 cup fresh lemon juice, or the juice of 2 lemons
2 Tablespoon hemp seeds
2 cups of unsweetened shredded coconuts for rolling the lemon balls in
PREPARATION:
1-Add everything to a food processor and mix until the mixture starts to stick together.
2-Using a 1” melon or ice cream scooper, take the mixture and into uniform balls.
3-Roll the balls in the coconut bowl and place in the freezer. Enjoy

I was wondering if you have tried walnuts instead of cashews.
I’m allergic to cashews, can I substitute pecans or walnuts for the cashews? Or can I use all almonds?
I’m actually allergic to walnuts so I have not tried with walnuts. The reason I use cashews it’s for it’s creaminess. Not sure about almonds as I haven’t tried it. I think pine nuts is a great substitute for cashews.
