DESCRIPTION:

This recipe came together one day when I wanted to make something that was raw and quick. I wanted something that I could just throw together that would be delicious. The result is these beautiful gems, a mix of all my favorite ingredients.

INGREDIENTS:

12 pitted medjool dates, soaked in water for at least 15 minutes
1 cup frozen cranberries
1 cup raw hazelnuts
1/2 cup raw pistachios
4 Tbsp fresh orange juice
1 Tbsp orange zest
4 Tbsp unsweetened vegan dark chocolate chips
2 cups shredded unsweetened coconuts
1 cup ground pistachios

PREPARATION:

1-Add the soaked dates (not the water), cranberries, hazelnuts, whole pistachios, orange juice, orange zest, and chocolate chips to the food processor and process.
2-Stopping halfway through to make sure everything is blending. Keep processing until a ball starts to form and the mixture holds together.
3-Place the shredded coconut into a small bowl.
4-In a separate bowl, place the ground pistachios.
5-With a 1” ice creamer scooper, remove the mixture from the food processor and roll into 1-inch balls. Roll the balls in either the shredded coconut or the ground pistachios to coat completely.
6-Once everything is done put in air tight container and put into the freezer. Enjoy them semi frozen.
