DESCRIPTION:
If you love all things Pumpkin, especially with Chocolate Chips, then you will love these easy no-bake Chocolate Chip Oat Balls. These healthy treats are made with real pumpkin, gluten free oats, flax meal and naturally sweetened with dates. They’re perfect for a quick healthy snack for fall and to keep in your freezer for anytime you need a little treat.
INGREDIENTS:
2 Cups gluten free rolled oats
14 medjool dates
1/2 Cup organic pumpkin purée
2 Teaspoon pumpkin spice
1/2 Teaspoon vanilla powder
1/4 Teaspoon ginger
4 Tablespoons dairy free chocolate chips, or raisins/cranberries
1/4 Cup ground flax meal
PREPARATION:
1-Soak the dates with 1/2 cup of water for 15-20 minutes. Then discard the water.
2-Mix together all the dry ingredients to make sure the spices, oats, and flax meal are distributed evenly.
3-Put everything in a food processor fitted with a “S” blade, and start pulsing until all of the ingredients come together and a “dough” forms.
4-Next add the chocolate chips and pulse a few times more.
5-Take everything out and put the “dough” in a bowl.
6-Roll the mixture into balls using either your hands or a 1” ice cream scooper.
7-Place the balls in an airtight container and chill in the refrigerator or place in the freezer.

Don’t Chocolate chips have sugar in them?
The chocolate chips that I use are 100% pure chocolate without any sugar added to it. So if you are not used to it, they will be bitter. They can be purchased from the Santa Barbara Chocolate Factory.
