DESCRIPTION:

This Vegan Apple cranberry Chickpea Salad, is creamy, crunchy and perfectly balanced with sweet, tangy and savory flavors. Made with chickpeas, crisp apples, pecans and cranberries, all tossed in my homemade oil-free vegan Maple Dijon Salad Dressing. This salad is perfect for sandwiches, wraps, or scooped over greens. It’s a healthy and satisfying dish you’ll love anytime.

INGREDIENTS:

2-15oz. cans salt free chickpeas, drained and rinsed (or about 3 cups cooked)
1/2 cup chopped celery
1/2 cup finely chopped red onion
2 small crisp apples, diced (Fuji, Gala or Honeycrisp)
1/2 cup chopped toasted pecans, or walnuts
1/2 cup oil free dried cranberries, unsweetened
Freshly ground black pepper
1 cup or more to taste Maple Dijon Salad Dressing

PREPARATION:

1-In a food processor fitted with a “S” blade, add the rinsed chickpeas. Pulse 3-4 times so that the chickpeas break down. Do not over process as we don’t want a paste. Place in a large bowl.
2-To this bowl, add the remaining ingredients except the salad dressing. Toss until combined.
3-Pour the dressing over the chickpea mixture and fold until everything is well coated.
4-Chill at least 30/minutes before serving to let the flavors blend.
