DESCRIPTION:

Growing up, I ate a lot of watermelon salad that was filled with watermelon, feta cheese, cucumbers, fresh mint and walnuts.  Well that all changed when I became plant based and became allergic to dairy and walnuts.  So now, I make a delicious and refreshing Tropical Watermelon Salad that is filled with fresh watermelon, blueberries, pineapple, cucumbers, walnuts (optional) and fresh mint.  The most refreshing bite you’ll ever take, this easy side dish recipe is so simple to prepare and is always a hit at every meal!  It’s the perfect potluck dish.  Enjoy the summer flavors all year long!  To see how I prepared this dish please visit my YouTube channel.  Here is the link…. https://youtu.be/a2qFHuCpEFM

INGREDIENTS:

4 cups seedless watermelon, cubed
2 cups Persian cucumbers or English cucumbers, cubed
1 cup blueberries, or more to taste
1 cup fresh pineapple, or more to taste
1/4 cup shredded mint
1/4 cup fresh lime juice
1/2 cup chopped walnuts, optional

PREPARATION:

1-Chop the watermelon, cucumbers and pineapple and put in a large bowl.
2-Add the blueberries, lime juice, mint and walnuts.
3-Toss gently and refrigerate for about an hour, enjoy!
