You guys all know that I’m a huge fan of quick and easy delicious soups. And this soup will not disappoint. This soup is perfect to boost your immune system and is also perfect if you are not feeling well. It will make you feel better as it’s delicious, warm and cozy. This delicious soup is filled with plant-powered “green” goodness and has amazing health properties. It’s completely salt, oil, sugar and gluten free. It’s satisfying and creamy!
1 small to medium yellow squash, roughly sliced
1 small to medium zucchini, roughly sliced
1 1/2 cups cauliflower or broccoli, chopped
1 small red onion, roughly chopped
2-3 cloves of garlic
1 Tablespoons Herb De Provence seasoning
1 handful chopped kale
1 handful chopped Swiss Chard
12 steamed mushrooms, baby Bella’s
Some lime or lemon juice
1-Place the zucchini, yellow squash, cauliflower and 5 1/2-6 cups of water in your pampered chef micro cooker. Place in the microwave for 6 minutes. (You may use less water, as I make more to have leftovers for the next day)
2-Place the chopped onion, garlic and 1 cup of water in a high speed blender, and blend for a few seconds until everything is blended. Set aside.
3-To the blender, go ahead and add the kale, Swiss Chard, mushrooms, zucchini, squash, cauliflower and the liquid.
4-Start the blender on low and continue to ramp up the blender. Once on high, continue blending for 3-4 minutes.
5-Once done, place in your favorite mug or bowl, add some lemon/lime juice. I like to top it off with some wakame, some edible seaweed.
