This burrito bowl could not be easier, healthier and much tastier! I’m totally in love with this dish. Plus, it’s completely customizable to make it your own. This burrito bowl has it all, quinoa, black beans, corn, red bell pepper, onions and more. Easy to whip up ahead of time, these bowls are the perfect example of a healthy, hearty meal without sacrificing your taste buds. This dish is gluten free and I hope you enjoy it as much as I do.
2 cups of Romain lettuce, chopped
1 cup cooked quinoa
1/2 cup black beans
1/2 of a small red onion, sliced
1/2 cup red bell pepper, diced
1/2 cup roasted corn
1/4 cup fresh salsa or more to taste
1/4 cup fresh cilantro, chopped
2-3 fresh limes, juiced
1/2 of a avocado, chopped
1-2 Tablespoons of Pickled Jalapeños, or more to taste
1-2 Tablespoons pickled jalapeño, juice
1-Cook quinoa to your preferred method of cooking, set aside.
2-In a large bowl add the quinoa, black beans, red onions, bell peppers, corn, salsa, avocados, pickled jalapeño and juice, and lime juice.
3-Gently toss everything until well coated. Enjoy
1-Feel free to substitute the quinoa with brown rice or any other grain
2-Feel free to substitute the black beans
