DESCRIPTION:
This creamy and delicious “Notcho” Cheese Sauce, was inspired and adapted from Plantiful Kiki! It’s salt, oil, sugar free, dairy free and nut free. It’s the Yummiest “Cheese” sauce EVER! This easy sauce tastes just like nacho cheese sauce and it’s delicious on tacos, nachos, pasta, veggies, tortilla chips, potatoes, burritos and it also makes a terrific dip. I hope you love this Easy “Cheese” sauce!! Enjoy.
INGREDIENTS:
4 Cups cooked Yukon gold potatoes, cubed
1/2 Cup cannellini beans
1-12oz. jar roasted bell peppers, in water
1 Tablespoon lemon juice
2 Teaspoon garlic & onion powder
6 Tablespoons nutritional yeast, non fortified
1 1/2 cup potato water Or 2 cups of potato water to make a little thinner
1 Teaspoon smoked paprika powder
1/2 Teaspoon chipotle powder
1/4 Teaspoon jalapeño powder
PREPARATION:
1-Put everything in a high speed blender and blend everything until it’s creamy! Make sure to let the blender run for at least 3-5 minutes.
LOADED “NOTCHO’S“:
This is what I like to add, but you can certainly add your favorites:
Oil free tortilla chips
Refried beans, or black beans
“Cheese” sauce
Fresh tomatoes, chopped
Fresh guacamole
Pico De Gallo or salsa
Sliced olives
Sliced pickled jalapeño
Chopped cilantro
Green onions, chopped

Where do you get oil free tortilla chips or what do you make them from wheat? Cassava? Chickpea flour?
I’m not sure where to buy oil free chips. So I use corn tortillas from Trader Joe’s that are oil free and make my own chips. Check out my YouTube channel as I show you how to make them.
