DESCRIPTION:
If you’re looking for a high protein vegan salad that feels light, fresh, and satisfying—this is it! This high protein black bean lupin salad is fresh, flavorful and completely oil free. It’s satisfying and nutrient dense. It’s packed with protein and instead of a heavy dressing, we’re using fresh lime zest and juice.
INGREDIENTS FOR SALAD BASE:
2 (15oz.) can black beans, drained & rinsed
1 1/2 cups corn
1/2 cup finely diced red onion
1 1/2 cup cooked ground lupin
1 medium red bell pepper, diced
TO COOK THE GROUND LUPIN:
1/2 cup dry lupin, mix with 3/4 cup of water, place in the microwave for 3 minutes. Once done fluff with a fork.
DRESSING:
Zest of a large lime
6-7 Tablespoons fresh lime juice
1 Teaspoon of ground cumin
1 Teaspoon smoked paprika
1/2 Teaspoon garlic powder
2 Tablespoons unfortified nutritional yeast
PREPARATION:
1-Cook the ground lupin, and set aside.
2-In a large bowl, toss all the salad ingredients together.
3-In a small bowl mix all the dressing ingredients.
4-Pour the dressing over the salad ingredients and toss everything together gently. Taste and adjust seasonings. Enjoy
