DESCRIPTION:
This Family Harvest Salad is filled with some of the best seasonal flavors, including butternut squash, pomegranates, wild rice, kale and much more. And the best part it’s so easy to throw together. It’s colorful, filling and delicious! It’s a delicious salad that your whole family will enjoy this holiday season.
INGREDIENTS:
3 Cups cooked wild rice
2 Cups cooked butternut squash, cubed 1/2” and (lightly steamed)
2 Cups shredded carrots
1 Cup curly parsley
2 Cups chopped kale
2 Cups chopped Romain
3-4 tangerines, peeled & separated
1-2 Cups pomegranate seeds
1/2 Cup pumpkin seeds or pistachios (optional)
1/2 Cup fresh mints, chopped
DESCRIPTION:
Add everything to a large bowl except the pumpkin seeds, and toss gently. Once you are ready to serve add the dressing, pumpkin seeds and toss gently.
POMEGRANATE & ORANGE DRESSING:
INGREDIENTS:
6 Tablespoon fresh orange juice
4 Tablespoon fresh lime juice
4 Tablespoon pomegranate molasses
1 small shallot
1/2 Cup raw cashews or cannelloni beans
1/4-1/2 Cup water (depending on how thin you want the dressing to be)
PREPARATION:
Put everything in a high speed blender and blend until smooth. Start with 1/4 cup of water and after blending you want the dressing to be a little thinner, then slowly add a little more water while it’s blending.
