Banana Cranberry Breakfast Cookie

DESCRIPTION:

A deliciously wholesome cookie you can actually feel good about eating for breakfast. These soft naturally sweetened breakfast cookies are made with ripe bananas, hearty oats, and sweet-tart dried cranberries. They’re so easy to make, satisfying, and perfect for a healthy breakfast, snack or grab-and-go treat.

INGREDIENTS:

4 large ripe bananas, mashed 2 cups
1/4 cup unsweetened apple sauce
3 cups gluten free rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon vanilla powder
1 cup fresh cranberries, cut in half
Zest of 1 large orange

PREPARATION:

1-Preheat oven to 350 degrees F.
2-In a large bowl, mash the bananas until smooth.
3-Stir in the applesauce, cinnamon, vanilla and orange zest.
4-To this bowl, add the oats and cranberries. Mix until fully combined. Dough should hold together as the oats will absorb the banana and applesauce. Once mixed let it sit for 5-10 minutes before scooping it to bake.
5-Scoop about 2 tablespoons per cookie onto the baking sheet. Once you have scooped all the oat, wet your fingers and gently flatten the cookie a bit. The cookie will not spread while baking.
6-Bake for 40-43 minutes or until edges are lightly golden and cookies feel set.
7-Cool completely before removing, they will firm up as they cool.
8-These are best served slightly warm or from the refrigerator. Enjoy
