Sweet & Smokey Red Bell Pepper Hummus

DESCRIPTION:

This roasted red bell pepper hummus is a creamy, flavorful, oil free, gluten free and absolutely delicious. Made with wholesome ingredients, it’s a vibrant dip that’s perfect for parties, meal prep, or snacking with fresh veggies. Packed with protein, it’s the perfect dip. Best part, easy to make in just minutes. Use it as a dip, spread or topping for your favorite bowls and wraps.

INGREDIENTS:

1 (20oz.) jar roasted red bell pepper, water packed and drained
2 (15oz.) can chickpeas, drained & rinsed (about 3 cups cooked)
2 Tablespoons tahini
3-4 Tablespoons fresh lemon juice
1 1/2 Teaspoons garlic powder
2 Teaspoons ground cumin
1/2 Teaspoon smoked paprika
3-4 Tablespoons aquafaba or water

PREPARATION:

1-Drain the roasted red bell peppers. (Make sure to drain well)
2-In a food processor, fitted with a “S” blade, blend chickpeas, roasted bell peppers, tahini, lemon juice, garlic, cumin, and smoked paprika.
3-Blend until smooth, scraping down the sides as needed.
4-Add aquafaba or water, 1 tablespoon at a time, until creamy and fluffy.
5-Taste and adjust seasonings.
6. Place in a bowl and put in the refrigerator for a few hours before serving. The hummus will thicken up slightly.
