Middle Eastern Tomato Quinoa Pilaf

DESCRIPTION:

This dish is light, fluffy and full of warm Middle Eastern flavor, all made in the Instant Pot. Completely oil free, gluten free, and can be made in just minutes.  Healthy, high protein meal that’s perfect for busy weeknights.

INGREDIENTS:

2 cups quinoa (rinsed well)
2 cans garbanzo beans, drained & rinsed
3 ounces sun-dried tomatoes, julienned (not in oil)
2-14oz. can salt-free diced tomatoes, with juice
1 cup of water
1/2 teaspoon cinnamon
1 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon turmeric
1/2 teaspoon black pepper
2 teaspoon salt free seasoning

PREPARATION:

1-Add 1 cup of water to your instant pot
2-Next add your quinoa
3-Add your spices, add stir with the quinoa
4-Next add 2 cans diced tomatoes, with the juice, gently mix
5-Add julienned sun dried tomatoes
6-Add garbanzo beans and gently mix
7-Place the lid on the instant pot.  Turn the valve to the sealing position and select manual for 2 minutes.
8-Let the pressure come down naturally, carefully open the lid and fluff everything with a fork.
9-Place everything in a glass bowl and let it cool, enjoy.
