DESCRIPTION:
This Mediterranean chickpea salad is the ultimate summer salad and it starts by showcasing the star ingredient, chickpea! These protein packed legumes are combined with an assortment of colorful and nutrient-rich vegetables, taking inspiration from the Mediterranean cuisine known for its fresh and vibrant flavors.
INGREDIENTS:
2-15oz. can salt free garbanzo bean, rinsed and drained
1 medium red bell pepper, cubbed
1 medium orange bell pepper, cubbed
1 bunch scallions, finely chopped
4 tablespoons fresh dill, chopped
1 small bunch fresh cilantro, chopped
1-1 1/2 cups cherry tomatoes, halved
4-5 pickles, finely chopped
Pepper to taste
PREPARATION:
1-Place everything in a large bowl and toss with Zesty Pomegranate Dressing. Enjoy!

What kind of pickle? Salt free?
I used kosher pickle. I’ve never been able to find salt-free pickle. Just rinse them well.
