INGREDIENTS:

Quiche Batter:
Roasting the vegetables:
2 medium zucchini, about 2 pounds
1 small sweet onion or yellow onion, cut into wedges
5 cloves of garlic or more to taste

HUMMUS:
1-15oz. can of garbanzo beans, drained & rinsed (save the aquafaba)
2 Tablespoon fresh lemon juice
1 1/2 Teaspoon grated lemon zest
2 Tablespoon aquafaba, you may need more
1 Teaspoon dried dill
2 Tablespoon fresh dill, chopped
1 Teaspoon ground cumin
1 Teaspoon smoked paprika
1/2 Teaspoon sumac
2 Tablespoon tahini
1/2 Teaspoon chickpea miso

PREPARATION:

1-Preheat the oven to 375 F.
2-Cut the zucchini lengthwise in half. Place cut-side down on the parchment paper. Next cut the onion into thick wedges and arrange them around the zucchini. Cut the tip off the garlic exposing some of the garlic. Next place the garlic in a parchment paper, place a little water inside and wrap it all up. You want the garlic to roast in the steam. Place it next to the zucchini or onion on the baking sheet. Bake for approximately 35 minutes.
3-Once done, remove from the oven and let the roasted vegetables cool down a bit.
4-In your food processor, fitted with an “S” blade, add the garbanzo beans, lemon juice, aquafaba, roasted zucchini, roasted onion, and squeeze out the garlic, and the chickpea miso. Process to break everything down.
5-Open the food processor and scrape down the sides. Next add the tahini, dried dill, sumac, cumin and smoked paprika. Process until you reach the consistency that you like.
6-Place your hummus in a bowl and add the fresh dill and mix.
7-Place in the refrigerator for a few hours as the flavors develop.
8-Enjoy with crackers, vegetables, on sandwiches or anything that you like.
