Dump & Go Veggie Quinoa with Chickpeas

DESCRIPTION:

Dump & Go veggies quinoa with chickpeas tastes like you spent hours cooking in the kitchen, when it actually requires almost no effort at all!  You will love how healthy, versatile and affordable it is to make a veggie quinoa in the Instant Pot.

INGREDIENTS:

2 cups dry quinoa, rinsed
1-15oz. can salt-free garbanzo beans, rinsed and drained
3 cups of water
2 cups frozen peas and carrots
1/4 teaspoon ground saffron
1 tablespoon Benson’s Salt Free Table Tasty

PREPARATION:

1-Add everything to the Instant Pot and stir until everything is mixed.
2-Place the lid on the Instant Pot and lock.
3-Turn the valve to the sealing position and select pressure cook/manual for 2 minutes. 
4-Once done, allow the pressure to come down naturally.  Carefully open the lid, and fluff everything with a fork.
5-Place everything in a bowl and let it cool.  Enjoy
