Zucchini Boats “Italian Style”!

DESCRIPTION:

I absolutely love zucchini’s as one can do so much with it. Here I have decided to hollow them out and use my quick marinara sauce, mushrooms and black beans to make a hearty, delicious and gluten free meal. Best part, you can enjoy them hot out of the oven/air fryer or at room temperature. You can have them as appetizers or make it into a main dish. When making these, get ready for the kitchen to smell like you are making Pizza! They are low calorie and extremely filling!

INGREDIENTS:

One batch of my oil free marinara sauce, here’s the link: Click Here
1-15oz. can salt free black beans, rinsed & drained
1 cup steamed mushrooms, sliced
Nutritional Yeast (optional)
4-5 medium sized zucchini and/or yellow squash, hallowed out

PREPARATION:

1-In a bowl, add the marinara sauce, black beans and mushrooms. Mix until well combined.
2-Cut the zucchini/yellow squash lengthwise and hollow them out using a spoon. Make sure to leave a 1/4” thick rim around each half.
3-Using a spoon, load up the zucchini boats with the marinara sauce. Make sure not to over stuff the zucchini or squash.
4-With a spoon, sprinkle some nutritional yeast on top.

AIR FRY OPTION:

Set the air fryer at 400 degrees, for approximately 30 minutes. Place the loaded zucchini and squash, and air fry them for about 30 minutes. You will want to check on them at 25 minutes to make sure they are still holding up.

IN THE OVEN:

Preheat the oven at 400 degrees, and place everything in the oven. Let them bake for about 25-30 minutes.

  1. Had these for dinner tonight and they were really good! I was hesitant to use black beans with the Italian flavor profile, but I decided to give it a try! Filling and flavorful!!
