DESCRIPTION:

These are by far The “BEST” Refried beans made in the Instant Pot. I’m so in love with these delicious beans! And once you see how easy they are to make, you’ll ditch the canned stuff! It’s simple, healthy, delicious and easy to customize to your liking. They make for a fantastic easy side dish. Creamy and luscious, they’re perfect for tacos, burritos, enchiladas, taquitos and so much more. I’m sure it will soon become a family favorite. Enjoy

INGREDIENTS:

1 lbs. dry pinto beans, rinsed and picked over
1 large white onion, diced
6 garlic cloves, minced
6 cups of vegetable broth, oil free
2 bay leaves
2 Teaspoon roasted cumin
2 Teaspoon dried oregano

2 Tablespoons Benson’s Table Tasty
1/4-1/2 Teaspoon dried jalapeño chili peppers, or more to taste

PREPARATION:

1-In the instant pot, using the sauté function, sauté the onions and garlic until the onions are caramelized. Use a little water in the pan if onions start to stick.
2-Once the onions have caramelized, turn the sauté function off. Put the remaining ingredients in the instant pot. Pressure cook on manual for 45 minutes. Let the pressure come down naturally.
3-Strain the beans’ liquid with a strainer. Keep the beans liquid in a separate bowl to use a little at a time to mix in with the beans. Place beans back in the Instant Pot.
4-Using an immersion blender, start blending and adding liquid a little at a time, until you get the creamy consistency that you like.
5-Enjoy

    Can you clarify the dry beans in the ingredients and what reads like canned beans under preparations?

    1. Yes, of course, you start with sautéing in your instant pot the onions and garlic. Then you will add to this the beans, water or broth, spices and the bay leaves. Close the lid, cook on manual for 45 minutes. Let pressure come down naturally. Then when you remove the lid, you are going to drain the liquid that is in the pot with the beans. But save that water. I hope this helps, we are not using any canned beans. Please check out my YouTube video where I show you exactly how I make it.

      1. This truly is the best and easiest refried beans! I made it using water instead of broth and no bay leaves, and it still came out delicious. Just added a little chipotle powder and used both fresh and dried powder jalapeño. It was so good! Thank you, Shayda!

  2. These beans are delicious! I use Kitchen Basics Vegetable Stock instead of broth for a richer flavor. The leftover liquid makes a delicious brown gravy. Thank you Shayda!

  3. I’ve been pretty depressed since SantaFe Bean Company stopped making their dehydrated refried beans (only ingredient was pinto beans) as it was a always an easy go to in a hurry. This recipe tastes even better than what I used to make and it is only marginally more work to make. In fact this recipe probably makes enough to save small batches but I wouldn’t know because we ate the whole thing! Thank you so much Shayda I can’t believe how good these are! You saved taco night in my house!! Amazing!
